After reading some articles about the diversity of flavor in coffees found throughout Colombia, I realized I had never really done much research in that country. The coffees I had tasted from there were remarkably good, with typical profiles of marzipan, caramel, chocolate and cherry; profiles one would expect from the region (like our Santa Barbara Estate). What I hadn't realized was just *how* diverse the region actually was.
This is particularly true with Finca La Estrella. What you are tasting when you drink La Estrella is the profile of a single varietal (caturra - a subspecies of cafea arabica), from a single farm. Yes, a natural process, but clean, dense and high-grown. When we first cupped this coffee blind I mistook it for our Ethiopia Natural. The nose and profile are super unique, very (*very*) fruit forward, but with lower acidity than you'd expect, a very prominent sweetness and entirely unexpected overall.

Coffee freshness matters. When you order online, your order will leave our shop in less than 72 hours. In most cases, orders purchased from our website are roasted every week on Wednesday and delivered or shipped on Thursday. If you order on Thursday, Friday or Saturday, and we happen to have your entire order in stock, your order may ship the same day. Otherwise, it will be queued for the next roast day.
